Each phase of the production process was carefully analysed to assess its critical points, in order to define the controls that are necessary to prevent and manage risks. Monitoring of physical, chemical and microbiological standards on raw materials and on finished products is guaranteed through lab analyses; sophisticated systems are installed for the prevention of contamination by foreign bodies (metal detector and label verification systems), to check the protective atmosphere in the packs, to guarantee that the cold chain isn’t interrupted and for accident prevention. Product traceability is guaranteed throughout the process and is constantly tested to check its efficiency.
